The following are William Blue’s course offerings in overview. They reflect several levels of academic achievement and a variety of learning and assessment styles.

There are also a number of pathway options between William Blue programs and you are welcome to speak with an advisor to help determine the best strategy to suit your learning preferences and ambitions. 


Certificate II in Hospitality (Operations) – for Australian high school students

  • Practical experience in the training restaurant
  • Career outcome: Food and Beverage Attendant

Advanced Diploma of Hospitality Management

  • Hospitality skills, such as food and beverage service and food preparation, are introduced in Semester 1 to develop practical skills and a sound understanding of Hospitality Management. These are then overlaid with management subjects in Semesters 2 and 3
  • Practical experience in the training restaurant plus an 800 hour paid Industry Placement
  • Career outcome: Entry level or Junior supervisory positions

Advanced Diploma of Hospitality Management (Commercial Cookery pathway)

  • Structured as an Advanced Diploma with a Commercial Cookery pathway, this program gives students the basic skills and knowledge required for a successful career in the kitchen. In addition, students complete management subjects that begin preparing them for management positions within the food preparation environment
  • Practical experience in the training restaurant plus an 900 hour paid Industry Placement
  • Career outcome: Entry level kitchen positions

Associate Degree in Hospitality Management

  • This program aims to develop managers for the Hospitality industry by fostering both industry-specific skills and generic management knowledge through a more analytical and critical approach.
  • Practical experience in the training restaurant plus an 800 hour paid Industry Placement
  • Career outcome: Junior supervisory positions

Bachelor of Business (Tourism & Hospitality) awarded by La Trobe University

  • This year of study builds on students’ high levels of knowledge and ability in the areas of practical applications, operational challenges, management and business; and introduces the higher-level critical analysis skills required by the contemporary hospitality manager for the strategic development of a business
  • Career outcome: Junior supervisory or Management positions
